The Barton Rooms traces its name to Mr. Hugh Barton, responsible for construction of the wing to the Main House in the 1830s. Our Restaurant today was once the original dining room of the Main House! Within the Dining Room, our Executive Head Chef, Pablo Bernardo and his team serve delectable, creative, and modern dishes. Our dining menu has been carefully paired with an extensive list of fine wines combining to create the perfect fine dining experience. Chef Pablo Bernardo – Executive Head Chef

With over 18 years of culinary experience, Chef Pablo Bernardo brings a refined blend of classical training, global influence, and heartfelt passion to the kitchens of Barberstown Castle.

Born and trained in Brazil, Pablo graduated in Culinary Arts at the age of 21 before pursuing advanced training at some of France’s most prestigious institutions, including Le Cordon Bleu and École Ducasse. His early career was shaped by a deep dedication to both classic and contemporary French cuisine, with a particular focus on pastry and fine desserts—an experience that instilled in him a meticulous attention to detail and a deep appreciation for balance and precision.

After successfully opening and running his own restaurant in Brazil, Pablo made the life-changing decision to relocate to Ireland with his family—a place he now proudly calls home. In Ireland, he completed his second degree at Technological University Dublin and has since continued to evolve his culinary identity, blending French discipline with Irish authenticity.

Drawing inspiration from Ireland’s fresh local produce and rich culinary heritage, Pablo’s cooking beautifully unites refined technique with heartfelt creativity. Before joining Barberstown Castle, he worked at the Michelin Guide–recommended and award-winning restaurant in Co Kildare, where he continued to develop his distinctive style rooted in technique, seasonality, and respect for ingredients. Chef Pablo is committed to prioritising Irish ingredients and sustainably supporting Ireland's farmers, food producers and fishermen. 

At Barberstown Castle, Chef Pablo leads the culinary team with creativity and dedication, curating menus that celebrate local producers and incorporating vegetables harvested at the Castle’s own gardens. His approach highlights refined techniques, seasonal balance, and a true sense of place—offering guests an experience that is both elegant and memorable.

 

 

Afternoon Tea:

Afternoon Tea is a lush experience, with finely cut sandwiches, freshly baked scones with cream and homemade preserves, and a mouth-watering array of pastries and cakes.

"Botanical Afternoon Tea" is priced from €50 euro per person and is served Thursday / Friday and Saturday

Sunday Lunch is served each week in The Barton Room Restaurant. We cater for this in the Barton room and also the Castle Keep.
